sweet potato for lunch and dinner

In my previous post, I started my journey to getting my “happy with my body” back.  Thanks so much for everyone’s tips, recipes, blog / book suggestions, food swaps, etc!!  Eating better is my #1 priority right now.  It’s the toughest thing for me because I LOVE food so much especially sweets.

For lunch yesterday, I had scrambled eggs (2 eggs), a cup of Green Giant Cauliflower & Sweet Potato Rice, parmesan cheese, and a dash of pepper.  It was yummy!

I’ve grown to love sweet potatoes.  I can’t believe I only started been eating sweet potatoes for about a couple years!  For dinner, I cut the potatoes, coated it with some olive oil, and bake until tender.

As far as the main dish, I spread the cream cheese on the chicken, sprinkled diced jalepeños onto the cream cheese, and rolled the chicken breast securing with toothpicks.  Bake at 450 degrees for 20-25 minutes.  The chicken for the kids had no peppers.  Everyone enjoyed it!
